INGREDIENTS:
1 cup sugar
1/2 cup brown sugar
1 cup canned pumpkin
1/2 cup canola oil
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1 cup raisins
1/2 cup walnuts
1/4 cup chai tea (make with 1 or 2 tea bag of Tea Range Masala Chai)
1 cup boiling water
INSTRUCTIONS:
Pour boiling water over the Masala Chai tea bag and let steep.
Combine sugars, pumpkin, oil and eggs, beating until well-blended.
Sift flour, salt, soda and spices. Add to the pumpkin batter and mix well.
Stir in raisins, nuts and chai tea.
Spoon into a well-oiled 9×5 pan.
Bake at 350 degrees for 65 to 75 minutes.
Remove from pan and place on a cooling rack to cool.
Enjoy with a hot cup of Tea Range tea.
Variation: Substitute chocolate chips for raisins.
